A British handmade hard cheese this award-winning cheese is produced on the the cusp of Lincolnshire Wolds. Produced by Simon Jones using spring milk from Holstein cattle.
This cheddar/Gruyere like cheese takes between 12-24 months to develop changing in taste and flavour throughout the maturing process.
Notes of an almost pineapple, toasted nuts and grassy dominate the flavour. In winter the taste becomes savoury and almost meaty.
Bedford Cheese Co recommends this to be paired with one of our Malbecs and goes equally well with a beer.
